Terrible title, right? So cliche.
Last night we made fantastic greek food. I actually participated this time too - which is a feat for me considering that most of the time I just stand in the kitchen and get in the way and ask how much longer it's going to be until it's ready. Yes, I'm eternally 6 years old.
Ok, so first there's the spanikopita - which is super simple. I only glanced at a recipe just to make sure I remembered everything. Essentially, you thaw Phyllo dough and layer it in sheets in a pan brushing on a thin layer of melted butter between each layer. About 8 sheets worth. Then you top it with a sh*tload of cooked down or frozen spinach (you will seriously need way more than you think you will is you cook it down yourself - like two bags from the salad section at the grocery store) that has sauteed onions and garlic added. A little salt and little pepper and I used a little dried parsley. Want a specific measurement for the parsley? Smell it. You'll know how much to use based on how much you like the way it smells. Trust. You could also add mushrooms and we might throw some toasted pine nuts in there next time also to add some texture. Top with crumbled feta. Then back to the layers of dough and butter until you have 8 more sheets. Cut some slits in the top and bake for 30-45 mins at 350 degrees (until browned on top and the edges are rolling up.) My mother always says that when you can "smell" something, it's done. This is one of those things.
Jesse roasted some tomatoes and red onions with some marinated shrimp and we paired it all with tabbouleh we bought at Costco that is actually good and obviously way easier then making it from scratch, housemade tzatziki and a leftover piece of naan.

We may have gone a little overboard...
Get it? Because it's a lot of seafood? Overboard? Like a boat? Or the 1987 Kurt Russell and Goldie Hawn movie. Ok, not at all like that. Let's move forward.
We drove to the northern Cincinnati this weekend to what may possibly be the best grocery store ever, Jungle Jim's. The only place I have found that even comes close is Wegman's, but it still might be a little better. I mean, can Wegman's beat an animatronic Robin Hood and giant ear of corn? I didn't think so. We were there about two hours and walked out with a lot of things but among them was a lobster and crab legs.
We're not much for Valentine's Day generally speaking, but to rationalize buying so much luxurious food we told ourselves it would be our "Valentine's Dinner." Combine the lobster and crab with the sea bass Jesse found on clearance Sunday morning at our local grocery store, Kroger and we were in business.
We had some left over succotash and mushroom risotto from a couple nights before so we put our thinking caps on and decided to leave the succotash as it was but to take the scrap pieces of meat from the lobster and crab and make risotto cakes. Yum.
By the way, aren't those counter tops just spectacular? *gag* Love our rental, but we won't be looking at that wood grain for much longer hopefully. More on that later, but back to the meal. It was fantastic. I don't typically like risotto, but I loved the risotto cakes. Good call, Jesse!
Ok, so clockwise from the top. Crab legs, risotto cakes, lobster tail, cast iron skillet-fried sea bass* and finally the black bean succotash. Lots of seafood, but also lots of tastiness. Who doesn't like a little over indulgence now and then? Of course, tomorrow night, which actually happens to be Valentine's Day, we're having a kobe beef filet and mahi mahi, so maybe we just live a little indulgently in general when it comes to food.
*speaking of indulgence, yes I am aware that sea bass has a low sustainability level and therefore you shouldn't eat it. If your panties are in a bunch about it, you can relax, it was in the clearance bin. Better we eat it then it go bad, right?
