Back to the Grind
Closer and closer we get! We met our Kickstarter goal a couple weeks ago which was awesome and allowed us to continue our build out on the truck. If all things go as planned we shoud be up and running by the end of the month. Woot! We have some big things planned for the opening party but I don't want to mention too much about it until it's set in stone. Additionally, we have gotten a lot of great press about the truck and have been invited to participate in many events throughout the summer and may have even found ourselves a permanant spot one day during the week for those of you who aren't quite as spontaneous. Either way, lots of big things coming up that we'll be able to share very soon!

Grind on Kickstarter
We got an email today that said it was difficult to find the link to our Kickstarter so here it is again. I'll probably keep it at the top of the blog until it's over but if new stories are posted just scroll down a little to find them. Oh, and if you haven't donated yet, we're getting so close! Please help anyway you can and get rewards like t-shirts, tickets to our grand opening and even your name on the back of the truck.

Grind Updates and Kitchen Remodel
So our kitchen was pretty busted when we moved in. We removed some cabinet doors and added a stainless steel table to make it a little easier to cook in but it still just wasn't cutting it. Jesse had to go out of town for work a couple weekends ago so I got crazy with some paint we had here in the house and painting the cabinets. They're completed but I need to to a little touch-ups before I take pictures so I'll hopefully get those up this weekend. Trust that is looks awesome. Like, really awesome.
In Grind news, we're making some serious progress on our Kickstarter progress and have gotten a lot of amazing press. We've even booked a couple events for this summer and we're not even open yet! I don't want to announce until everything is confirmed but seriously, this sh*t is getting awesome. Good things is, since most things are on holidays or weekends we'll both be able to keep our jobs and pursue this craziness we've taken on! We'll be busy but it will be worth it. Let's hear it for hard work. In light of hard work I leave you with a little Daft Punk to tide you over until those awesome kitchen pics this weekend.

Grind - Kickstarter
Want an awesome Grind t-shirt? Or maybe a ticket to our grand opening in a few months? We're doing a Kickstarter fundraiser to get those last few little things taken care of. Visit the link below and check it out. We've got some good stuff on there and you get to see us look awkward in a promotion video. Ha!
Also, if we can get enough people to donate by the end of the week I'll post the link for the first version of the video. Let's just say that Jesse left to his own devices is well...you'll see.

Huot, LLC. Say whaaat?!
So Jesse and I are officially a LLC. That's right kiddoes, we are one step closer to our bad-ass food truck. Which also means that we are now able to go to Restaurant Depot since we have a tax I.D. number. If you aren't familiar with Restaurant Depot, it's pretty much Costco on steroids. I mean, you can buy an entire goat there. A WHOLE EFFING GOAT! You can also get giant wheels of cheese, enormous boxes of crab legs, oh and now that I know how much a super-sized box of ahi tuna is, there's a good chance I will never pay for it again in a restaurant. Who knew food in such large amounts would make me so happy?
This also goes hand in hand with all the amazing work Jesse completed in the living room. (more pics of that later) and the amazing work he is now doing on the trailer. The floor is finished and soon the walls will be too. That means we'll get to start buying the fun stuff.
Here is Jesse fixing the electrical outlets. He used almond butter to mark the spots on the wall panels so he wouldn't have to measure. I suggested he used lipstick. I think that says just about everything you need to know about either of us. Heh.
And here is a shot where you can see some of the flooring. At the suggestion of the guy at Home Depot we used thin tile that could be replaced if they got damaged as opposed to linoleum which would all have to be replaced - especially with how high traffic it will be in there. It's really neat to see it all coming together so now that it's starting to look like something, I'll post more progress pics as we go.

Jesse won a raffle!
I haven't won anything since that Walkman in the 6th grade so Jesse must be the good luck charm because we won a raffle with a pretty decent cash prize. What does this mean? This means we get to start on the food trailer interior sooner then we imagined! Yay! This also means that since J and I made an agreement that he wouldn't start working on the truck until the living room wall was completed. Yes, this living room wall that we've been distracted from completing in an acceptable period of time since April. That it will now be completed by the end of the weekend. It's amazing what the incentive of a giant, industrial griddle purchase will do to a man, eh? More pictures and update later. It's going to be freaking awesome! AND, I'm pretty sure we need to start getting some more house and truck stuff up here. I can only write about other people's restaurants so much, right?!

‘Make music, make a baby, make a painting, make dinner, make a mess. as long as I’m making something.’ - Lindsey Way
Well, well, well...what do we have here? What we have here kiddos is the trailer of which Jesse and I are now the proud owners. You are probably saying to yourself, "But Liz. Why in the hell would you buy a concession trailer?" Ah, an excellent question to which the answer is an enthusiastic, "To open a gourmet food trailer!" As I'm sure some of you have noticed, I've been posting on Facebook, writing on here and discussing extensively with anyone who will listen the idea of food trucks here in Louisville. Jesse and I had thrown around the idea of starting one as a way to work ourselves into eventually owning a restaurant and when we saw that it was becoming "the next big thing" here in the 'Ville we realized we were going to need to move a little faster on our plans. After some number crunching, dozens of conversations, hours of planning we decided to take a risk and make this sh*t happen.
As you can tell, it's not much now. It obviously needs to be completely furnished. Originally, Jesse had found someone looking to sell their taco truck but after realizing how much work it was going to need, how many things we were going to have to replace and the fact that they couldn't come up with a title, we opted to just buy a new one. So, over the course of the next few months we'll be working and tweaking and adding and preparing to hopefully start serving in the Spring. We have lots of ideas so far but nothing in concrete so I won't make them real by posting them on the interwebs just yet. Rest assured though, that it's going to be delicious, super fun, and of course bad-ass. ;)
